Emerson’s Brewery

In 2015, Graham Crust led the design of a new spiritual home for Emerson’s Brewery in Dunedin. The design sought to celebrate the craft of brewing by making the brewing process visible, enhancing visitors’ understanding of the craft and, ultimately, their enjoyment of the finished product.

Reflecting the Scottish heritage of both Emerson’s and the people of Dunedin, the building combines a strong sense of place with an open and welcoming approach to the brewery experience.

At the heart of the facility is a large open-plan taproom bar, providing a social setting where visitors can experience the brewing process firsthand. The architecture brings people closer to the craft, creating a direct connection between making, sharing, and enjoying beer.
